Ingredients
1 lb ground turkey
1 tbsp olive oil
1/2 medium onion, diced
2 garlic cloves, minced
1 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1 cup cherry tomatoes, diced
1/2 cucumber, diced
8–10 romaine or butter lettuce leaves
1 cup Greek yogurt
1/2 cup grated cucumber (squeezed dry)
1 garlic clove, minced
1 tbsp fresh dill, chopped
1 tbsp lemon juice
Pinch of salt
Instructions
1. Make tzatziki: In a bowl, mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, and salt. Stir well and refrigerate until serving.
2. Heat olive oil in a skillet over medium heat. Add onion and cook 2–3 minutes until softened.
3. Add ground turkey to skillet, breaking it apart with a spoon. Cook 6–7 minutes until browned.
4. Stir in minced garlic, oregano, cumin, salt, and pepper. Cook 2–3 minutes until fragrant and turkey is cooked through.
5. Prep tomatoes and cucumber, keeping them chilled until ready to serve.
6. Lay out lettuce leaves. Spoon in turkey mixture, top with tomatoes, cucumber, and a dollop of tzatziki.
7. Serve immediately with lemon wedges if desired.
Notes
Store turkey and tzatziki separately for meal prep; assemble wraps just before eating.
