Ingredients

  • 3 red bell peppers (charred and peeled)
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 lbs chicken breasts or thighs

Instructions

  • Char the red peppers by placing them over an open flame or broiler until the skin is blackened.
  • Remove the charred skin and seeds, then finely chop the peppers.
  • In a bowl, combine olive oil, garlic, lime juice, cumin, chili powder, paprika, salt, and pepper.
  • Add the chopped peppers to the bowl and mix everything together until well combined.
  • Coat the chicken with the marinade, ensuring it is evenly covered.
  • Seal the marinated chicken in a plastic bag or cover with plastic wrap and refrigerate for at least 30 minutes (preferably 2 hours).
  • Preheat the grill over medium heat.
  • Grill the chicken for 6-7 minutes per side, until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for a few minutes before serving.
