Ingredients
- 3 red bell peppers (charred and peeled)
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 1 tbsp lime juice
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 lbs chicken breasts or thighs
Instructions
- Char the red peppers by placing them over an open flame or broiler until the skin is blackened.
- Remove the charred skin and seeds, then finely chop the peppers.
- In a bowl, combine olive oil, garlic, lime juice, cumin, chili powder, paprika, salt, and pepper.
- Add the chopped peppers to the bowl and mix everything together until well combined.
- Coat the chicken with the marinade, ensuring it is evenly covered.
- Seal the marinated chicken in a plastic bag or cover with plastic wrap and refrigerate for at least 30 minutes (preferably 2 hours).
- Preheat the grill over medium heat.
- Grill the chicken for 6-7 minutes per side, until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before serving.

- For extra flavor, marinate the chicken overnight.
