Ingredients

  • 1 lb ground beef
  • 1 can condensed cream of mushroom soup
  • 1 can Rotel diced tomatoes with green chilies
  • 1 packet taco seasoning mix (or homemade blend)
  • 1 bag Doritos, crushed
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  • Preheat oven to 350°F (175°C).

  • In a large skillet over medium-high heat, brown the ground beef, breaking it into crumbles.

  • Drain excess fat, then add chopped onion and taco seasoning. Cook until onion is translucent.

  • Stir in Rotel diced tomatoes with green chilies and the cream of mushroom soup. Simmer for 5 minutes.

  • In a 9×13 inch baking dish, spread a layer of the meat mixture.

  • Add a layer of crushed Doritos and a layer of cheese.

  • Repeat the layering process, ending with cheese on top.

  • Cover with foil and bake for 30 minutes.

  • Remove foil and bake for an additional 10–15 minutes until the cheese is bubbly.

  • Let rest for 5 minutes before serving. Top with fresh cilantro if desired.
