Description
This ground chicken Mexican corn recipe combines lean protein, sweet corn, and bold spices for a quick and flavorful meal. Perfect for tacos, bowls, or as a dip!
Ingredients
- 1 lb ground chicken
- 2 cups Mexican corn (or sweet corn with bell peppers)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup diced tomatoes or salsa
- 1–2 jalapeños (optional, for heat), finely chopped
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup black beans (optional)
- 1/2 cup shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Heat a large skillet over medium heat and add a little oil.
- Sauté onion and garlic until soft and fragrant.
- Add ground chicken and cook until browned and no longer pink, breaking it up as it cooks.
- Stir in chili powder, cumin, paprika, salt, and pepper. Mix well.
- Add the Mexican corn and tomatoes. Simmer for 5-7 minutes, stirring occasionally.
- Taste and adjust seasonings if needed.
- Serve with rice, in tacos, or with tortilla chips, garnished with cilantro and cheese if desired.
Notes
- For added heat, increase the amount of jalapeños or add hot sauce.
- If you’re looking for a low-carb option, serve with cauliflower rice instead of regular rice.
