Description
These Ground Turkey Stuffed Bell Peppers are a colorful, healthy, and meal prep-friendly dinner option. Juicy turkey is mixed with rice, herbs, and tomato sauce, then baked in sweet bell peppers for a wholesome, family-friendly dish.
Ingredients
6 large bell peppers (any color)
1 lb lean ground turkey
1 tbsp olive oil
1 medium onion, diced
2 garlic cloves, minced
2 cups cooked rice (white, brown, or quinoa)
1 cup tomato sauce
1 tsp dried Italian herbs
1 tsp salt
1/2 tsp black pepper
1/2 cup shredded cheese (optional)
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds and membranes. Place peppers upright in a baking dish.
2. Heat olive oil in a skillet over medium heat. Add onion and sauté for 2–3 minutes.
3. Add ground turkey, breaking it apart with a spoon, and cook 6–7 minutes until browned.
4. Stir in garlic, Italian herbs, salt, and pepper. Cook 2 minutes until fragrant.
5. Add cooked rice and tomato sauce to skillet. Mix until filling is heated through.
6. Spoon filling into peppers, pressing down lightly. Top with cheese if using.
7. Pour 1/4 cup water into the bottom of the baking dish. Cover with foil and bake 30 minutes.
8. Remove foil and bake another 10 minutes until peppers are tender and cheese is melted.
9. Garnish with fresh parsley before serving.
Notes
Par-cook peppers before stuffing for a softer texture.
Freeze cooled stuffed peppers for up to 3 months; thaw before reheating.
Use riced cauliflower instead of rice for a low-carb version.
