Description

This Healthy Banana Sushi Snack is a fun, no-mess, kid-approved recipe made with bananas, peanut butter, and tortillas. A high-protein, fiber-rich snack idea for lunchboxes or after-school treats.


Ingredients

1 whole wheat tortilla

2 tbsp natural peanut butter (or almond/sunflower butter)

1 ripe banana, peeled

Optional toppings: shredded coconut, mini chocolate chips, chia seeds


Instructions

1. Lay the tortilla flat on a cutting board.

2. Spread peanut butter evenly across the tortilla.

3. Place banana at one end and roll up tightly.

4. Slice the rolled tortilla into bite-sized pieces to look like sushi.

5. Sprinkle with optional toppings if desired.

Notes

Make nut-free by swapping peanut butter for sunflower seed butter.

Wrap tightly if prepping ahead to prevent tortilla from drying.

Add a drizzle of melted dark chocolate for a dessert twist.
