Description
A wholesome, one-pan bowl with lean turkey and roasted sweet potatoes – quick, filling, and perfect for meal prep.
Ingredients
- 1 lb lean ground turkey
- 2 medium sweet potatoes, cubed
- 1 small onion, diced
- 2 garlic cloves, minced
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until fragrant.
- Add ground turkey, breaking it up with a spoon. Cook until browned.
- Season with paprika, cumin, salt, and pepper.
- Add roasted or steamed sweet potato cubes. Stir gently and cook for 5 more minutes.
- Serve warm, topped with herbs or a dollop of Greek yogurt if desired.
Notes
Use pre-roasted sweet potatoes to save time. Add black beans or kale for extra nutrients.
