These Healthy Keto Chocolate Energy Balls are fudgy, rich, and low-carb. Made with almond butter, cocoa, coconut, and seeds, they’re the perfect no-bake snack ready in 10 minutes.
Ingredients
1 cup almond butter (unsweetened)
¼ cup unsweetened cocoa powder
½ cup shredded unsweetened coconut
2 tbsp chia seeds or flaxseeds
2 tbsp sugar-free sweetener (erythritol, monk fruit, or stevia)
1 tsp vanilla extract
Pinch of sea salt
Instructions
1. In a mixing bowl, combine almond butter, cocoa powder, sweetener, vanilla, and salt.
2. Add shredded coconut and chia seeds, stirring until a thick dough forms.
3. Roll mixture into bite-sized balls using your hands.
4. Optional: roll balls in extra cocoa powder or shredded coconut.
5. Place on parchment-lined tray and refrigerate 10 minutes before serving.
Notes
Store in the fridge for up to 1 week or freeze up to 3 months.
Swap almond butter for peanut or cashew butter if preferred.
Add 1 tsp instant coffee powder for a mocha variation.
Use sunflower seed butter for a nut-free version.
