Description

These Healthy Mini Cheese Stuffed Peppers are colorful, crunchy, and creamy snack bites ready in just 5 minutes. Perfect for parties, lunchboxes, or quick protein-packed snacks.

Ingredients

10 mini bell peppers, halved and seeds removed

½ cup herbed cream cheese (or whipped cottage cheese)

1 tbsp fresh herbs (parsley, chives, dill), chopped

Salt and freshly ground black pepper, to taste

Optional toppings: sunflower seeds, everything bagel seasoning, crushed nuts

Instructions

1. Wash and slice the mini bell peppers in half lengthwise. Remove seeds and membranes.

2. In a small bowl, mix cream cheese with fresh herbs, salt, and pepper.

3. Fill each pepper half with the cheese mixture using a spoon.

4. Sprinkle optional toppings for crunch and flavor.

5. Arrange on a plate or in a snack box and serve immediately, or refrigerate until ready.

Notes

Make these up to 24 hours in advance and store in the fridge.

Swap cream cheese for vegan cream cheese to make them dairy-free.

Top with crushed nuts for extra protein and crunch.

Use flavored cream cheeses like garlic and herb for variety.
