Description
This Healthy Turkey Stroganoff with Greek Yogurt Cream Sauce is a lighter version of the classic, with lean turkey and a creamy, tangy yogurt base. Quick, comforting, and packed with protein.
Ingredients
1 lb lean ground turkey
1 tbsp olive oil
1 small onion, diced
8 oz mushrooms, sliced
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
1 tbsp flour or 2 tsp cornstarch
1 cup low-sodium chicken broth
2/3 cup plain Greek yogurt (2% or whole)
1 tsp Dijon mustard
1/2 tsp Worcestershire sauce
2 tbsp fresh parsley, chopped
Optional: egg noodles, rice, mashed cauliflower, zucchini noodles
Instructions
1. Heat olive oil in a large skillet over medium heat. Add onions and mushrooms and sauté for 5–6 minutes until softened.
2. Add ground turkey, garlic powder, paprika, salt, and pepper. Cook until turkey is browned and cooked through.
3. Sprinkle in flour or cornstarch and stir for 1 minute to coat the mixture.
4. Gradually add chicken broth, stirring constantly. Simmer for 5–6 minutes until slightly thickened.
5. Remove skillet from heat. Stir in Greek yogurt, Dijon mustard, and Worcestershire sauce until creamy.
6. Serve over noodles, rice, or your favorite base. Garnish with chopped parsley.
Notes
To prevent yogurt from curdling, stir in off heat and temper with warm sauce first.
Can be stored in fridge for 3–4 days in an airtight container.
Great with whole-wheat noodles, cauliflower mash, or zucchini noodles.
