Ingredients
- 1 lb bone-in chicken (or boneless chicken thighs)
- 1 medium onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 8 cups chicken broth (homemade or store-bought)
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
- 4 cups egg noodles (or pasta of choice)
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the onions, carrots, and celery in oil until softened (about 5-7 minutes).
- Add minced garlic and cook for another 1-2 minutes.
- Add chicken, broth, bay leaves, thyme, salt, and pepper. Bring to a boil.
- Lower the heat, cover, and simmer for 30 minutes until the chicken is tender.
- Remove chicken from the pot, shred, and return it to the pot.
- Bring soup back to a simmer and add noodles. Cook until noodles are tender (8-10 minutes).
- Season with salt and pepper to taste, and garnish with fresh parsley before serving.
Notes
- For extra richness, use bone-in chicken and simmer longer for a deeper flavor.
- To prevent noodles from becoming mushy, add them towards the end of cooking.
