Warm up with this classic chicken noodle soup recipe—filled with tender chicken, savory broth, and hearty noodles for the ultimate comfort food.


Ingredients

  • 1 lb bone-in chicken (or boneless chicken thighs)
  • 1 medium onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 8 cups chicken broth (homemade or store-bought)
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste
  • 4 cups egg noodles (or pasta of choice)
  • Fresh parsley for garnish

Instructions

  • In a large pot, sauté the onions, carrots, and celery in oil until softened (about 5-7 minutes).
  • Add minced garlic and cook for another 1-2 minutes.
  • Add chicken, broth, bay leaves, thyme, salt, and pepper. Bring to a boil.
  • Lower the heat, cover, and simmer for 30 minutes until the chicken is tender.
  • Remove chicken from the pot, shred, and return it to the pot.
  • Bring soup back to a simmer and add noodles. Cook until noodles are tender (8-10 minutes).
  • Season with salt and pepper to taste, and garnish with fresh parsley before serving.

Notes

  • For extra richness, use bone-in chicken and simmer longer for a deeper flavor.
  • To prevent noodles from becoming mushy, add them towards the end of cooking.
