Ingredients

Fresh ingredients for Italian drunken noodles on a cutting board

Wide pasta noodles (such as pappardelle or fettuccine): Perfect for soaking up the delicious sauce.

Chicken or turkey sausage: A flavorful alternative to traditional Italian pork sausage.

Cherry tomatoes: Fresh and juicy, they provide natural sweetness to the dish.

Bell peppers: Add vibrant colors and a delightful crunch.

Garlic and onions: These aromatics are essential for building flavor.

Fresh herbs: Basil and parsley bring a fragrant, refreshing touch.

Chicken or vegetable broth: Replaces wine to create a rich, balanced sauce.

Olive oil: A high-quality oil enhances the overall taste.

Grated Parmesan cheese: Optional, sprinkle over the top for a smooth and creamy finish

Crushed red pepper flakes: To add a gentle heat, if desired.

Instructions

1. Cook the Pasta

  • Bring a large pot of water to a boil, adding a good pinch of salt for seasoning.
  • Cook the wide pasta noodles according to the package instructions until al dente.
  • Drain the pasta and keep aside about 1 cup of the cooking water to help adjust the sauce consistency.

2. Prepare the Sausage and Vegetables

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add chicken or turkey sausage, breaking it into crumbles with a spoon. Cook until browned and thoroughly cooked, then remove from the skillet and set aside.
  • In the same skillet, sauté diced onions and minced garlic until fragrant.

3. Add the Vegetables

  • Add the diced bell peppers and halved cherry tomatoes to the skillet.
  • Cook until the vegetables soften slightly, and the tomatoes release their juices, creating a light sauce.

4. Build the Sauce

  • Pour in chicken or vegetable broth, stirring to combine.
  • Add fresh herbs, such as chopped basil and parsley, along with a pinch of crushed red pepper flakes for heat, if desired.
  • Let the mixture simmer for 5-7 minutes to develop flavors.

5. Combine Pasta and Sauce

  • Return the cooked sausage to the skillet.
  • Add the drained pasta and gently toss to coat every noodle in the sauce.
  • If the sauce seems too thick, add a splash of the reserved pasta water to adjust consistency.

6. Serve and Garnish

  • Plate the noodles while hot, topping with grated Parmesan cheese if preferred.
  • Garnish with additional fresh herbs for a vibrant finish.

Notes

Use pappardelle or fettuccine for the best texture.

Swap chicken sausage for a plant-based alternative for a vegetarian version.

Adjust the spice level with crushed red pepper flakes to suit your taste.
