Description
This Lasagna Soup Meal Prep gives you five hearty bowls packed with tomato-rich broth, pasta, and cheesy comfort. Perfect for busy weekday lunches, it’s your favorite comfort food in a grab-and-go format.
Ingredients
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
1 lb ground beef or turkey
24 oz jar tomato sauce or marinara
4–6 cups chicken or beef broth
8–10 broken lasagna noodles
½ cup ricotta cheese
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
Italian seasoning, salt, and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Sauté the onion until soft.
2. Add garlic and cook for 30 seconds more.
3. Add ground meat and cook until browned and no longer pink.
4. Stir in tomato sauce, broth, Italian seasoning, salt, and pepper. Bring to a simmer.
5. Add broken noodles and cook for 10–12 minutes until tender.
6. Remove from heat. Stir in ricotta, mozzarella, and Parmesan until creamy.
7. Divide into 5 meal prep containers. Cool slightly, then refrigerate.
Notes
To make it vegetarian, use veggie broth and replace meat with white beans or lentils.
Reheat with a splash of broth for the creamiest texture.
Freeze the base without noodles and cheese for best texture when reheating.
