Description
This Lazy Day Lasagna Soup is a quick, cozy comfort recipe made entirely with pantry staples. Using canned tomatoes, jarred marinara, broth, and dried noodles, it comes together fast and delivers all the flavors of classic lasagna in a one-pot soup.
Ingredients
2 tbsp olive oil
1 tsp onion powder or dried onion
1 tsp garlic powder
1 can (28 oz) diced tomatoes
2 cups jarred marinara or pasta sauce
4 cups chicken or vegetable broth
8 broken lasagna noodles
1 tbsp dried Italian seasoning
¼ tsp red pepper flakes (optional)
1 cup shredded mozzarella
½ cup ricotta or cottage cheese
¼ cup grated Parmesan
Salt & pepper to taste
Instructions
1. Heat olive oil in a pot over medium heat. Stir in onion powder and garlic powder until fragrant.
2. Add canned diced tomatoes, marinara sauce, broth, Italian seasoning, and red pepper flakes. Stir to combine.
3. Bring to a simmer, then add broken lasagna noodles. Cook 10–12 minutes until tender.
4. Remove from heat. Stir in ricotta, mozzarella, and Parmesan until creamy and melty.
5. Taste, season with salt and pepper, and serve hot.
Notes
Swap lasagna noodles for any pasta shape you have on hand.
Make it vegetarian by using vegetable broth and meatless cheeses.
Add a splash of cream or half-and-half for a richer version.
Store leftovers in the fridge up to 4 days; add broth when reheating.
Freeze the soup base without noodles and add fresh pasta when reheating.
