Description

Golden, crispy Lemon Garlic Roasted Chicken Thighs—juicy inside, zesty citrus flavor, and cozy comfort food perfect for Sundays.


Ingredients

6 bone-in, skin-on chicken thighs

2 tbsp olive oil

Juice of 1 large lemon

Zest of 1 lemon

4 garlic cloves, minced

1 tsp dried oregano or thyme

Salt and freshly ground black pepper, to taste

Optional: lemon slices and parsley for garnish


Instructions

1. Preheat oven to 200 °C (400 °F). Line a baking tray with parchment or lightly oil.

2. Pat chicken thighs dry with paper towels.

3. In a bowl, whisk olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.

4. Rub mixture generously over chicken thighs. Place skin-side up on tray. Add lemon slices if desired.

5. Roast for 35–40 minutes, or until skin is golden and internal temp reaches 74 °C (165 °F).

6. Broil for an extra 2–3 minutes for crispier skin.

7. Rest 5 minutes, garnish with parsley, and serve.

Notes

For deeper flavor, let chicken sit in the lemon garlic rub for 30 minutes before roasting.

Roast vegetables like potatoes or carrots on the same tray for a one-pan meal.

Reheat leftovers in the oven to keep skin crispy.
