Ingredients
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 clove garlic, finely grated or minced
- 1/2 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions
- In a bowl or jar, combine lemon juice and minced garlic.
- Add Dijon mustard, salt, and pepper. Whisk to mix.
- Slowly drizzle in olive oil while whisking continuously to emulsify.
- Store in a sealed jar in the fridge for up to 1 week.
- Shake well before each use. Enjoy!
Notes
Let the vinaigrette sit 10 minutes before serving to mellow the garlic. Adjust salt and mustard to taste.
