Description
Light Detox Soup for When You’re Sick is a soothing, hydrating broth filled with ginger, garlic, lemon, and vegetables—perfect for sick days and gentle recovery.
Ingredients
2 carrots, sliced
2 celery stalks, sliced
1/2 medium onion (optional), chopped
3–4 garlic cloves, minced
1 tbsp fresh ginger, sliced
1/2 lemon, sliced (or 1 tbsp lemon juice)
2 tbsp chopped parsley or cilantro
6 cups vegetable or chicken broth
Salt and black pepper to taste
1/4 tsp turmeric (optional)
Instructions
1. Warm 1 tsp oil in a medium soup pot over low-medium heat.
2. Add carrots, celery, and onion. Sauté gently for 3–4 minutes.
3. Add garlic and ginger. Stir lightly without browning.
4. Pour in broth. Add lemon slices and turmeric if using.
5. Simmer gently for 10–12 minutes until veggies are tender.
6. Turn off heat. Stir in fresh herbs and lemon juice if desired.
7. Adjust seasoning with salt and pepper. Serve warm.
Notes
This soup is naturally vegan when made with vegetable broth.
To ease digestion, skip onion and blend soup if needed.
For added protein, add quinoa or chickpeas near the end of cooking.
