Description
A clean and heart-healthy beef stew made with lean beef, fresh vegetables, and no-salt-added broth. Perfect for clean eating and low-sodium diets.
Ingredients
2¼ lbs lean beef stew meat, cut into 1-inch cubes
Black pepper, to taste
2 tablespoons flour (optional)
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
2 zucchinis, sliced or diced
1 bay leaf
1 teaspoon dried thyme or 1 tbsp fresh
4 cups no-salt-added beef broth
Fresh parsley, chopped (for garnish)
Instructions
1. Heat oil in a Dutch oven over medium-high heat. Season beef with pepper and optional flour.
2. Brown beef in batches. Remove and set aside.
3. Add onion, garlic, and celery. Sauté until softened.
4. Stir in thyme and bay leaf.
5. Return beef to the pot. Add carrots and zucchini.
6. Pour in broth to cover. Bring to simmer.
7. Cover and cook 1¼ to 1½ hours until beef is tender.
8. Remove bay leaf, taste, and adjust pepper.
9. Garnish with fresh parsley and serve.
Notes
Deglaze with a splash of lemon or vinegar to add brightness.
Use fresh herbs generously for better flavor.
Freeze leftovers for up to 3 months.
Add white beans or greens for extra nutrients.
