Ingredients
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large eggs
- 1/2 cup (100g) granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 cup (125g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 cup (60ml) heavy cream
Instructions
- Prep the pan: Grease the madeleine pan with butter and lightly dust with flour. Preheat the oven to 375°F (190°C).
- Mix wet ingredients: In a mixing bowl, beat the eggs and sugar until pale and fluffy (about 5 minutes). Add vanilla and mix briefly.
- Add dry ingredients: Sift together flour, baking powder, and salt. Gradually fold into the egg mixture, ensuring no lumps.
- Incorporate butter and cream: Slowly fold in melted butter, followed by heavy cream, mixing gently until smooth.
- Chill batter: Cover the batter and refrigerate for 30 minutes to allow it to rest.
- Fill the molds: Spoon or pipe the chilled batter into the madeleine pan, filling each mold about 3/4 full.
- Bake: Bake for 10-12 minutes or until the edges are golden and the center is puffed.
- Cool and serve: Remove from the pan immediately and cool on a wire rack. Dust with powdered sugar before serving.
