Description

A classic madeleine recipe with cream cake that combines buttery, golden shell-shaped cakes with a soft and fluffy texture. Perfect for tea time or dessert!


Ingredients

  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup (60ml) heavy cream

Instructions

  • Prep the pan: Grease the madeleine pan with butter and lightly dust with flour. Preheat the oven to 375°F (190°C).
  • Mix wet ingredients: In a mixing bowl, beat the eggs and sugar until pale and fluffy (about 5 minutes). Add vanilla and mix briefly.
  • Add dry ingredients: Sift together flour, baking powder, and salt. Gradually fold into the egg mixture, ensuring no lumps.
  • Incorporate butter and cream: Slowly fold in melted butter, followed by heavy cream, mixing gently until smooth.
  • Chill batter: Cover the batter and refrigerate for 30 minutes to allow it to rest.
  • Fill the molds: Spoon or pipe the chilled batter into the madeleine pan, filling each mold about 3/4 full.
  • Bake: Bake for 10-12 minutes or until the edges are golden and the center is puffed.
  • Cool and serve: Remove from the pan immediately and cool on a wire rack. Dust with powdered sugar before serving.
