Description
Mango Coconut Overnight Oats are a creamy, tropical breakfast made with coconut milk, chia seeds, and sweet mango. Meal prep friendly and refreshing.
Ingredients
- ½ cup rolled oats
- ½ cup coconut milk
- ⅓ cup diced mango
- 1 tbsp chia seeds
- 1 tbsp maple syrup
- 1 tbsp shredded coconut
- Optional: ¼ tsp vanilla, lime zest
Instructions
- In a jar, combine oats, coconut milk, chia seeds, maple syrup, and vanilla.
- Stir well and fold in diced mango and shredded coconut.
- Cover and refrigerate overnight (or at least 4 hours).
- Top with extra mango and coconut before serving. Enjoy cold or warm.
Notes
Use frozen mango for easy prep. For more creaminess, mix in coconut yogurt. Store in fridge up to 5 days in airtight containers.
