Ingredients
2 cups cooked shredded chicken
1 cup finely chopped celery
1/2 cup mayonnaise or mayo-yogurt blend
1 teaspoon Dijon or yellow mustard
1/2 teaspoon lemon juice (optional)
Salt and black pepper to taste
1 tablespoon chopped parsley or chives (optional)
Instructions
1. Place shredded chicken and chopped celery in a mixing bowl.
2. Whisk together mayonnaise, mustard, lemon juice, salt, and pepper in a small bowl.
3. Pour dressing over the chicken mixture and mix until coated evenly.
4. Stir in chopped herbs if using. Mix gently.
5. Taste and adjust seasoning. Chill 30 minutes before serving.
