Description
A refreshing no-bake watermelon cake layered with creamy yogurt frosting and topped with fresh fruit. The ultimate healthy summer treat!
Ingredients
- 1 large seedless watermelon
- 1½ cups Greek yogurt
- 2 tbsp honey
- 1 tsp vanilla extract
- Mixed fresh fruit (strawberries, kiwi, blueberries)
- Mint leaves (optional)
- Paper towels
Instructions
- Cut both ends off the watermelon and stand it upright.
- Slice off the rind vertically until only red flesh remains.
- Pat the surface dry with paper towels and chill for 30 minutes.
- Mix yogurt, honey, and vanilla together until smooth.
- Frost the top and sides of the chilled watermelon with yogurt mixture.
- Decorate with fresh fruits and mint leaves.
- Chill for another 10–15 minutes before slicing and serving.
Notes
Make sure the watermelon is as dry as possible before frosting to keep the yogurt from sliding.
