No-Bake Watermelon Cake with Yogurt Frosting

Description

A refreshing no-bake watermelon cake layered with creamy yogurt frosting and topped with fresh fruit. The ultimate healthy summer treat!


Ingredients

  • 1 large seedless watermelon
  • 1½ cups Greek yogurt
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • Mixed fresh fruit (strawberries, kiwi, blueberries)
  • Mint leaves (optional)
  • Paper towels

Instructions

  1. Cut both ends off the watermelon and stand it upright.
  2. Slice off the rind vertically until only red flesh remains.
  3. Pat the surface dry with paper towels and chill for 30 minutes.
  4. Mix yogurt, honey, and vanilla together until smooth.
  5. Frost the top and sides of the chilled watermelon with yogurt mixture.
  6. Decorate with fresh fruits and mint leaves.
  7. Chill for another 10–15 minutes before slicing and serving.

Notes

Make sure the watermelon is as dry as possible before frosting to keep the yogurt from sliding.
