Description

Ingredients
- 4 ripe tomatoes (Roma or heirloom)
- ½ cucumber, diced
- ½ red bell pepper, diced
- ¼ small red onion, diced
- 1 garlic clove, grated
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- Salt to taste
Instructions
- Chop all vegetables into small, even cubes.
- Combine tomatoes, cucumber, pepper, onion, and garlic in a bowl.
- Add olive oil, vinegar, and salt. Mix well.
- Let it chill for 5–15 minutes before serving cold.
- Optional: Garnish with fresh basil or croutons.
