Description
This one-pot hearty chili is loaded with ground beef, beans, tomatoes, and bold spices. A comforting, family-friendly dinner that’s easy to make and satisfying.
Ingredients
1 lb ground beef
1 onion, diced
2 garlic cloves, minced
1 can (14 oz) red beans, drained and rinsed
1 can (14 oz) diced tomatoes
2 tbsp chili powder
1 tsp ground cumin
1 cup beef broth or water
Salt and pepper to taste
— Optional Additions —
1 diced bell pepper
1/2 tsp smoked paprika
Shredded cheddar and green onions for garnish
Instructions
1. Heat a large pot over medium heat. Add ground beef and onion. Cook until beef browns and onions soften.
2. Stir in garlic and cook for 30 seconds.
3. Add chili powder, cumin, salt, and pepper. Stir to coat evenly.
4. Pour in tomatoes, beans, and broth. Stir and scrape the bottom of the pot.
5. Bring to a simmer. Cook uncovered for 20–25 minutes, stirring occasionally.
6. Serve hot with cheese and green onions on top.
Notes
Make it ahead and refrigerate for deeper flavor.
Freezes well for up to 3 months.
Use turkey or chicken instead of beef for a leaner version.
