Description
This One-Pot Ground Turkey Lasagna Soup delivers all the cheesy, saucy comfort of lasagna in a cozy, healthy soup form. Made with lean ground turkey, tomatoes, and pasta, itβs the perfect weeknight dinner.
Ingredients
1 lb ground turkey
1 tbsp olive oil
1 medium onion, diced
3 garlic cloves, minced
1 tbsp Italian seasoning
1/4 tsp red pepper flakes (optional)
1/2 tsp salt
1/4 tsp black pepper
2 tbsp tomato paste
1 (28 oz) can crushed tomatoes
4 cups chicken or vegetable broth
8 lasagna noodles, broken into small pieces
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
Fresh basil or parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large pot over medium heat. Add ground turkey and cook 5β6 minutes, breaking it apart, until browned.
2. Add onion and cook 3 minutes until softened. Stir in garlic, Italian seasoning, salt, pepper, and red pepper flakes. Cook 1 minute until fragrant.
3. Stir in tomato paste, crushed tomatoes, and broth. Bring to a boil, then reduce heat to a simmer.
4. Add broken lasagna noodles and cook 10β12 minutes until tender, stirring occasionally.
5. Taste and adjust seasoning. Add more broth if needed for desired consistency.
6. Serve in bowls topped with ricotta, mozzarella, and fresh basil or parsley.
Notes
Cook pasta directly in the soup for best flavor.
Freeze without pasta for better texture; add noodles when reheating.
Add spinach or zucchini in the last few minutes for extra veggies.
