Description
This One Pot Lasagna Soup is a cozy, cheesy twist on traditional lasagna. It’s made with pantry staples, cooks in just 30 minutes, and delivers all the comfort of the original dish in an easier format.
Ingredients
1 lb ground beef or sausage
1/2 cup diced onion
2–4 cloves garlic, minced
2 tbsp tomato paste
24 oz marinara sauce
4–6 cups beef or chicken broth
8–10 lasagna noodles, broken into pieces
1 cup shredded mozzarella
1/2 cup ricotta cheese (optional)
1/4 cup grated Parmesan
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
1. In a large pot, brown the ground beef with diced onions and garlic. Drain any excess fat.
2. Stir in tomato paste and cook for 1 minute.
3. Add marinara sauce, broth, Italian seasoning, salt, and pepper. Bring to a boil.
4. Break lasagna noodles and stir them into the soup. Reduce heat and simmer for 10–15 minutes until pasta is tender.
5. Remove from heat and stir in cheeses. Let rest 2 minutes before serving.
6. Top with fresh herbs or more cheese if desired.
Notes
Make it vegetarian by using vegetable broth and skipping the meat.
Use gluten-free pasta to suit dietary needs.
Freeze the soup base without noodles and add fresh pasta when reheating.
