Ingredients

  • 1 cup Pastina pasta
  • 4 cups chicken or vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 celery stalk, diced (optional)
  • 1 carrot, diced (optional)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh or dried herbs (parsley, basil, thyme), to taste
  • Optional: diced zucchini, spinach, cooked chicken, beans, or tofu
  • Optional finishing: lemon juice and grated Parmesan cheese

Instructions

  • Prepare all ingredients by chopping the vegetables and measuring the broth.

  • Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft and fragrant.

  • Add broth to the pot and bring to a gentle boil. Season with salt, pepper, and herbs.

  • Add the pastina pasta and cook for 5-7 minutes or until al dente, stirring occasionally.

  • If using optional vegetables or proteins, add them in the last few minutes of cooking.

  • Remove from heat, add a squeeze of lemon juice and sprinkle Parmesan cheese if desired.
