Ingredients
- 1 lb langostinos (peeled and deveined)
- 2 medium zucchinis (spiralized or sliced)
- 1 cup fresh basil leaves
- 1/4 cup pine nuts
- 1/4 cup Parmesan cheese (or dairy-free option)
- 2 cloves garlic
- 1/4 cup olive oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
- Optional: extra basil for garnish
Instructions
- Prepare the Pesto Sauce:
In a blender or food processor, combine the fresh basil leaves, pine nuts, garlic, Parmesan, olive oil, and lemon juice. Blend until smooth and season with salt and pepper to taste. - Cook the Langostinos:
