Description

This Pesto Langostino Zucchini recipe combines succulent langostinos, fresh zucchini, and a homemade pesto sauce for a light, healthy, and delicious meal. Perfect for low-carb or keto diets!

Ingredients

  • 1 lb langostinos (peeled and deveined)
  • 2 medium zucchinis (spiralized or sliced)
  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 1/4 cup Parmesan cheese (or dairy-free option)
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Optional: extra basil for garnish

Instructions

  • Prepare the Pesto Sauce:
In a blender or food processor, combine the fresh basil leaves, pine nuts, garlic, Parmesan, olive oil, and lemon juice. Blend until smooth and season with salt and pepper to taste.
  • Cook the Langostinos:
Heat a large pan over medium-high heat and add a drizzle of olive oil. Cook the langostinos for about 2-3 minutes per side until they turn pink and opaque. Remove from heat and set aside.
  • Prepare the Zucchini:
Spiralize or slice the zucchinis into thin ribbons. In the same pan, sauté the zucchini for about 2-3 minutes, just until tender but still firm.
  • Combine Everything:
Toss the cooked langostinos and zucchini with the pesto sauce. Mix well to coat evenly and serve immediately.
  • Garnish and Serve:
Optionally, garnish with extra basil leaves and Parmesan before serving.

Notes

  • For a vegan option, omit the Parmesan or use a dairy-free alternative.
  • You can use store-bought pesto if you are short on time, though homemade pesto is recommended for the best flavor.
  • If you prefer, you can also roast the zucchini for a slightly different texture.
