Description
This Quick & Hearty White Chicken Chili is ready in just 30 minutes. Made with rotisserie chicken, white beans, and warm spices, it’s a creamy, comforting dinner perfect for busy weeknights.
Ingredients
2 cups shredded rotisserie chicken
2 cans (15 oz each) white beans, drained and rinsed
1 can (4 oz) diced green chiles
1 small onion, diced
3 garlic cloves, minced
4 cups chicken broth
½ cup sour cream
1 tsp cumin
1 tsp chili powder
½ tsp oregano
Salt and pepper, to taste
Olive oil, for cooking
Toppings: sour cream, jalapeño slices, shredded cheese, fresh cilantro
Instructions
1. Heat 1 tbsp olive oil in a large pot over medium heat.
2. Add onion and garlic, cooking until softened.
3. Stir in cumin, chili powder, and oregano; cook for 1 minute.
4. Add shredded chicken, white beans, green chiles, and chicken broth. Stir to combine.
5. Bring to a simmer and cook for 15 minutes.
6. Stir in sour cream and season with salt and pepper.
7. Ladle into bowls and top with jalapeño slices, cilantro, or shredded cheese.
Notes
Use chicken breasts instead of rotisserie by cooking them with onions and garlic first.
Great Northern or cannellini beans work best for creaminess.
Add Monterey Jack cheese for extra creaminess.
Stores well in the fridge for up to 3 days or freeze for up to 3 months.
