Ingredients

For Classic Grilled Salmon Kama:

  • 4 salmon kama (salmon collars)
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sake (optional)
  • 1 tablespoon mirin
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • Salt and pepper to taste

For Miso-Glazed Salmon Kama:

  • 4 salmon kama
  • 1/2 cup white miso paste
  • 1/4 cup sake
  • 2 tablespoons mirin
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • Sesame seeds and chopped scallions (for garnish)

Instructions

Classic Grilled Salmon Kama:

  1. Rinse the salmon kama under cold water and pat dry.

  2. In a bowl, mix soy sauce, sake, mirin, garlic, and ginger.

  3. Place salmon kama in a ziplock bag and pour in the marinade. Seal and chill for 30 minutes to 2 hours.

  4. Preheat grill to medium-high heat.

  5. Remove salmon from marinade and let excess drip off.

  6. Grill for 4–5 minutes per side or until internal temperature reaches 145°F and flesh flakes easily.

Miso-Glazed Salmon Kama:

  1. Preheat the broiler.

  2. In a saucepan, combine miso paste, sake, mirin, sugar, soy sauce, rice vinegar, and ginger. Whisk and simmer for 5 minutes until thickened.

  3. Pat the salmon dry.

  4. Line a broiler pan with parchment paper and place salmon kama on it.

  5. Brush both sides with miso glaze.

  6. Broil for 4–5 minutes per side, about 6 inches from the heat, until caramelized and cooked through.

Notes

  • For a healthier alternative, try air frying at 400°F for 8–10 minutes.
  • Oven baking is also effective; bake at 400°F for 12–15 minutes.
  • Fresh salmon kama with firm texture and bright color yields the best results.
  • Feel free to experiment with flavors like lemon zest, rosemary, or sesame oil for variation.
