- Fresh spinach (200g)

- Fresh herbs (such as basil or parsley, for garnish)
Instructions
- Roll out the pasta dough on a floured surface.
- Prepare the filling by mixing ricotta, spinach, Parmesan, egg, salt, and pepper.
- Cut the dough into squares and place a spoonful of filling in the center of each square.
- Fold the pasta over the filling to form a pouch, sealing the edges tightly.
- Boil a pot of salted water and cook the scrigno di pasta until they float to the top, about 5-7 minutes.
- Serve with olive oil and garnish with fresh herbs and grated Parmesan.
