Description

Scrigno di pasta is a delightful Italian dish featuring golden pasta shells filled with creamy ricotta and spinach. Perfect for any occasion, this recipe is easy to make and customizable with various fillings.


Ingredients

  • Fresh pasta dough (500g)
  • Ricotta cheese (250g)
  • Fresh spinach (200g)
  • Grated Parmesan (100g)
  • Salt (to taste)
  • Black pepper (to taste)
  • Olive oil (2 tbsp)
  • Egg (1)
  • Fresh herbs (such as basil or parsley, for garnish)

Instructions

  • Roll out the pasta dough on a floured surface.
  • Prepare the filling by mixing ricotta, spinach, Parmesan, egg, salt, and pepper.
  • Cut the dough into squares and place a spoonful of filling in the center of each square.
  • Fold the pasta over the filling to form a pouch, sealing the edges tightly.
  • Boil a pot of salted water and cook the scrigno di pasta until they float to the top, about 5-7 minutes.
  • Serve with olive oil and garnish with fresh herbs and grated Parmesan.
