Ingredients
- 1 ½ cups grated zucchini (squeeze out excess moisture)
- 1 cup almond flour
- ½ cup unsweetened cocoa powder
- ¼ cup coconut oil or olive oil
- ½ cup maple syrup or honey
- 2 large eggs
- 1 teaspoon vanilla extract
- A pinch of sea salt
- Optional: dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Grease or line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, combine the grated zucchini, almond flour, cocoa powder, and salt.
- In another bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Fold in the dark chocolate chips if using.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Let cool before cutting into squares.
Notes
For a gluten-free option, use almond flour. Make sure to squeeze out excess moisture from zucchini before using.
