Description

These zucchini brownies are rich, fudgy, and healthy! Packed with zucchini for added nutrients, these brownies are a guilt-free dessert that doesn’t sacrifice taste.


Ingredients

  • 1 ½ cups grated zucchini (squeeze out excess moisture)
  • 1 cup almond flour
  • ½ cup unsweetened cocoa powder
  • ¼ cup coconut oil or olive oil
  • ½ cup maple syrup or honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • A pinch of sea salt
  • Optional: dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease or line an 8×8-inch baking pan with parchment paper.
  3. In a large mixing bowl, combine the grated zucchini, almond flour, cocoa powder, and salt.
  4. In another bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until combined.
  6. Fold in the dark chocolate chips if using.
  7. Pour the batter into the prepared baking pan and smooth the top.
