Ingredients
- 100g unsalted butter (softened)
- 80g powdered sugar
- 2 large egg whites
- 100g all-purpose flour

- 150g high-quality white chocolate
- 30g heavy cream
- 1 tsp unsalted butter
Instructions
- Preheat the oven to 320°F (160°C).
- Cream the butter and powdered sugar in a bowl until smooth. Add the egg whites one at a time, mixing well after each addition.
- Sift the flour and salt into the mixture. Stir gently until combined, then mix in the vanilla extract.
- Pipe small squares of batter onto a lined baking tray. Flatten slightly with a spatula.
- Bake for 10-12 minutes, or until golden brown around the edges. Let the cookies cool completely.
- Melt the white chocolate with heavy cream over low heat. Stir in the butter until smooth.
- Spread a thin layer of white chocolate filling onto one cookie and press another cookie on top. Let the cookies set at room temperature for about an hour before serving.
