Ingredients

  • 100g unsalted butter (softened)
  • 80g powdered sugar
  • 2 large egg whites
  • 100g all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 150g high-quality white chocolate
  • 30g heavy cream
  • 1 tsp unsalted butter

Instructions

  • Preheat the oven to 320°F (160°C).
  • Cream the butter and powdered sugar in a bowl until smooth. Add the egg whites one at a time, mixing well after each addition.
  • Sift the flour and salt into the mixture. Stir gently until combined, then mix in the vanilla extract.
  • Pipe small squares of batter onto a lined baking tray. Flatten slightly with a spatula.
  • Bake for 10-12 minutes, or until golden brown around the edges. Let the cookies cool completely.
  • Melt the white chocolate with heavy cream over low heat. Stir in the butter until smooth.
  • Spread a thin layer of white chocolate filling onto one cookie and press another cookie on top. Let the cookies set at room temperature for about an hour before serving.
