Ingredients
1 tablespoon olive oil
1 small onion, finely diced
3 cloves garlic, chopped
8 oz mushrooms, sliced
1 cup chicken broth
1/4 cup white grape juice
1 tablespoon balsamic vinegar
1 cup light cream
4 boneless skinless chicken thighs or breasts
Salt and pepper, to taste
Fresh parsley for topping
Instructions
1. Warm olive oil in a skillet and lightly brown chicken on both sides. Transfer to slow cooker.
2. Add diced onions, chopped garlic, and sliced mushrooms on top of the chicken.
3. Pour in chicken broth, white grape juice, and balsamic vinegar so the liquid surrounds the chicken.
4. Season with salt and pepper, cover, and cook on LOW for 5–6 hours.
5. Once chicken is tender, stir in light cream and cook uncovered for 10–15 minutes until the sauce thickens.
6. Garnish with fresh parsley and serve with mashed potatoes, rice, or noodles.
