Description

A cozy bowl of slow cooker chicken noodle soup with tender chicken, soft vegetables, and egg noodles — perfect for sick days, cold nights, or when you just want comfort in a bowl.


Ingredients

2 boneless, skinless chicken breasts

3 carrots, sliced

2 celery stalks, chopped

½ onion, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried parsley

1 teaspoon salt

½ teaspoon black pepper

6 cups chicken broth

2 cups egg noodles

Fresh parsley, chopped (for garnish)


Instructions

1. Add chicken, carrots, celery, onion, garlic, thyme, parsley, salt, pepper, and broth to your slow cooker.

2. Cover and cook on LOW for 6–7 hours until chicken is cooked through and tender.

3. Remove chicken, shred it using two forks, and return to pot.

4. Stir in egg noodles, cover again, and cook another 20–25 minutes until noodles are tender.

5. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley and a squeeze of lemon if desired.

Notes

Cook egg noodles separately if planning to freeze.

Add lemon juice just before serving for brightness.

Pairs well with crusty bread or grilled cheese sandwiches.
