Ingredients
1 lb boneless, skinless chicken thighs, cut into chunks
½ lb beef sausage or chicken sausage, sliced
1 onion, chopped
1 green bell pepper, diced
2 celery stalks, chopped
3 cloves garlic, minced
1 can (15 oz) diced tomatoes
2 cups chicken broth
1 cup long-grain rice (uncooked)
1 tsp paprika
1 tsp thyme
1 tsp oregano
½ tsp cayenne pepper (optional for heat)
Salt and black pepper to taste

Instructions
1. Place chicken, sausage, onion, bell pepper, celery, garlic, diced tomatoes, broth, rice, and all seasonings into your slow cooker. Stir to combine evenly.
2. Cover and cook on LOW for 5–6 hours or HIGH for 3 hours, until the rice is tender and the flavors have blended beautifully.

Notes
