Ingredients

lbs boneless chicken thighs or breasts

1 onion, sliced

1 cup mushrooms, sliced

1 can (10.5 oz) cream of chicken soup

½ cup chicken broth

1 teaspoon garlic powder

1 teaspoon paprika

Salt & pepper to taste

Fresh parsley for garnish


Instructions

1. Place sliced onions and mushrooms in the bottom of your slow cooker to create a flavorful base.

2. Layer the chicken thighs or breasts over the vegetables.

3. In a bowl, whisk together the cream of chicken soup, chicken broth, garlic powder, paprika, salt, and pepper until smooth.

4. Pour the creamy mixture evenly over the chicken, covering all pieces.

5. Cover and cook on LOW for 6–7 hours (or HIGH for 4–5 hours) until the chicken is tender and cooked through.

6. Stir gently before serving to mix the sauce, mushrooms, and onions together.

7. Serve hot over mashed potatoes, rice, or noodles, and garnish with chopped fresh parsley.

Notes

For a lighter version, use reduced-sodium chicken broth and low-fat cream of chicken soup.

Thighs give a richer flavor, but chicken breasts work well if you prefer leaner meat.

To thicken the gravy slightly, remove the lid during the last 20 minutes of cooking.

Leftovers store in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheat gently with a splash of broth to restore creaminess.
