Description
Creamy Tuscan-style chicken slow-cooked with garlic, sun-dried tomatoes, spinach, and Parmesan – a rich and easy Italian dinner favorite.
Ingredients
4 boneless, skinless chicken breasts (or thighs)
½ cup sun-dried tomatoes, chopped
2–3 garlic cloves, minced
1 cup chicken broth
½ cup heavy cream or half-and-half
1 tsp Italian seasoning
2 cups fresh spinach
½ cup grated Parmesan cheese
Salt and pepper to taste
Instructions
1. Place chicken in the crockpot.
2. Add sun-dried tomatoes, garlic, broth, cream, and seasoning.
3. Season with salt and pepper, cover, and cook on low for 4–5 hours or high for 2–3 hours.
4. Stir in spinach and Parmesan during the last 10 minutes.
5. Let sit for a few minutes before serving.
6. Serve over pasta, rice, or with crusty bread.
Notes
For extra flavor, sauté garlic before adding to crockpot.
Use kale instead of spinach for more texture.
Add mushrooms or artichoke hearts in the last hour.
