Ingredients
2 lbs chicken breasts, cubed
2 potatoes, diced
2 celery stalks, sliced
2 carrots, chopped
1 onion, diced
3 cloves garlic, minced
1 cup cream (or coconut cream for dairy-free)
3 cups chicken broth
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp black pepper
Salt to taste
1 cup white beans (optional)
Instructions
1. Dice and prepare all vegetables and chicken into bite-sized pieces.
2. Layer potatoes, carrots, celery, onion, and garlic at the bottom of the slow cooker, then top with chicken.
3. Sprinkle thyme, rosemary, black pepper, and salt over the ingredients.
4. Pour chicken broth evenly to cover everything.
5. Cover and cook on LOW for 6–7 hours until chicken is tender and vegetables are soft.
6. Stir in the cream (or coconut cream) and white beans during the last 15 minutes of cooking.
7. Taste and adjust seasoning before serving warm with bread or herbs.
Notes
For a thicker texture, mash a few potatoes in the slow cooker before serving.
Add spinach or kale in the last 10 minutes for color and nutrition.
Coconut cream creates a light dairy-free version without losing creaminess.
