Slumgullion is a hearty, old-fashioned stew made with simple ingredients like ground beef, vegetables, and flavorful broth. This comforting one-pot dish is rooted in American culinary history and is perfect for a filling, budget-friendly family meal.
Ingredients
- 1 lb ground beef (or lamb or venison)
- 1 tbsp olive oil1 medium onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 3 cups beef or vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- Optional: 1/2 cup elbow macaroni or egg noodles
- Optional: chopped parsley for garnish
Instructions
- Prepare ingredients: Chop the vegetables into small, uniform pieces. Season the ground beef with salt and pepper.

Brown the meat: Heat oil in a large pot over medium-high heat. Add ground beef and cook until browned, about 5–7 minutes.

Add vegetables: Stir in the onions, carrots, potatoes, and garlic. Cook for 5 minutes until they begin to soften.

Add liquids and seasonings: Pour in the broth and diced tomatoes. Add thyme, rosemary, bay leaf, and additional salt and pepper.

Simmer: Bring to a boil, then reduce heat and simmer uncovered for 45–60 minutes, or until the vegetables are tender and the flavors meld.

Optional noodles: In the last 10 minutes of cooking, add macaroni or egg noodles if desired.

Finish and serve: Remove bay leaf, taste and adjust seasonings, and garnish with chopped parsley. Serve warm.
Notes
- Slumgullion is extremely flexible. Feel free to use leftover meats or vegetables you have on hand.
- For a thicker consistency, simmer uncovered or mash some of the potatoes.
- You can refrigerate leftovers for up to 4 days or freeze for up to 3 months.
