Description

Slumgullion is a hearty, old-fashioned stew made with simple ingredients like ground beef, vegetables, and flavorful broth. This comforting one-pot dish is rooted in American culinary history and is perfect for a filling, budget-friendly family meal.


Ingredients

  • 1 lb ground beef (or lamb or venison)
  • 1 tbsp olive oil1 medium onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 3 cups beef or vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Optional: 1/2 cup elbow macaroni or egg noodles
  • Optional: chopped parsley for garnish

Instructions

  • Prepare ingredients: Chop the vegetables into small, uniform pieces. Season the ground beef with salt and pepper.
  • Brown the meat: Heat oil in a large pot over medium-high heat. Add ground beef and cook until browned, about 5–7 minutes.

  • Add vegetables: Stir in the onions, carrots, potatoes, and garlic. Cook for 5 minutes until they begin to soften.

  • Add liquids and seasonings: Pour in the broth and diced tomatoes. Add thyme, rosemary, bay leaf, and additional salt and pepper.

  • Simmer: Bring to a boil, then reduce heat and simmer uncovered for 45–60 minutes, or until the vegetables are tender and the flavors meld.

  • Optional noodles: In the last 10 minutes of cooking, add macaroni or egg noodles if desired.

  • Finish and serve: Remove bay leaf, taste and adjust seasonings, and garnish with chopped parsley. Serve warm.

Notes

  • Slumgullion is extremely flexible. Feel free to use leftover meats or vegetables you have on hand.
  • For a thicker consistency, simmer uncovered or mash some of the potatoes.
  • You can refrigerate leftovers for up to 4 days or freeze for up to 3 months.
