Ingredients

  • 1 lb smelt fish, cleaned and gutted
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 cup breadcrumbs (optional)
  • 1 tbsp olive oil or vegetable oil (for frying)
  • Lemon wedges, for serving
  • Fresh herbs (optional, for garnish)

Instructions

  • Prepare the Smelt: Clean and gut the smelt fish. Pat them dry with a paper towel.
  • Coat the Fish: In a shallow bowl, mix flour, salt, pepper, paprika, garlic powder, and onion powder. Optionally, coat with breadcrumbs for a crunchier texture.
  • Heat the Oil: In a frying pan, heat olive oil over medium-high heat.
  • Fry the Smelt: Place the smelt fish in the hot oil and fry for 2-3 minutes per side, or until golden and crispy.
  • Serve: Remove the fish and place on a paper towel to drain excess oil. Serve with lemon wedges and fresh herbs for garnish.

Notes
