Ingredients
- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can corn kernels, drained
- 1 can diced tomatoes
- 1 can green chilies
- 1 packet taco seasoning
- 4 cups chicken or vegetable broth
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh cilantro, chopped (for garnish)
- Sour cream, shredded cheese, avocado slices, tortilla strips (for topping)
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef or turkey and cook until browned.
- Add beans, corn, diced tomatoes, green chilies, taco seasoning, garlic powder, onion powder, and broth to the pot. Stir to combine.
- Bring to a simmer, reduce heat to low, and let the soup cook for 20 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve chilled or at room temperature, topped with cilantro, sour cream, shredded cheese, avocado slices, and tortilla strips.
Notes
- For a spicier soup, add more chili peppers or hot sauce.
- If you prefer a thicker soup, you can blend part of it with an immersion blender.
- The soup can be made ahead and stored in the refrigerator for up to 3 days.
