Description
A simple taco soup made with just 5 pantry ingredients — ground beef, beans, corn, diced tomatoes, and taco seasoning. Quick, budget-friendly, and hearty.
Ingredients
Ground beef, 1 lb
Black beans, drained and rinsed, 1 can
Corn, drained, 1 can
Diced tomatoes (with juice), 1 can
Taco seasoning, 1 packet
Instructions
1. Brown ground beef in a large pot over medium heat.
2. Drain excess fat if needed.
3. Add diced tomatoes and taco seasoning; stir to combine.
4. Add black beans and corn. Stir well.
5. Add a splash of water if needed for desired consistency.
6. Simmer on low for 10–15 minutes.
7. Taste, adjust seasoning, and serve hot with optional toppings.
Notes
Top with shredded cheese, sour cream, or tortilla chips if desired.
To spice it up, add jalapeño or chili powder.
Use ground turkey or plant-based crumbles for a variation.
Can be made in the slow cooker or Instant Pot after browning beef.
