Description
This stovetop chili is smoky, bold, and richly flavored thanks to paprika, cumin, and chili powder. Perfect for a cozy, satisfying dinner in under an hour.
Ingredients
1 lb ground beef or turkey
1 onion, diced
2 garlic cloves, minced
1 tbsp smoked paprika
2 tsp chili powder
1 tsp ground cumin
1 can (14 oz) diced tomatoes
1 can (14 oz) kidney, pinto, or black beans, drained and rinsed
1 cup beef or chicken broth
Salt and pepper to taste
— Optional Flavor Additions —
1/2 tsp chipotle powder or cayenne pepper
1 tsp cocoa powder
Fresh cilantro or green onions for garnish
Instructions
1. Heat a Dutch oven over medium heat. Add ground meat and diced onion. Cook until browned and softened.
2. Add garlic and stir for 30 seconds until fragrant.
3. Stir in smoked paprika, chili powder, cumin, salt, and pepper. Cook 30 seconds to bloom spices.
4. Add diced tomatoes, beans, and broth. Stir well and scrape bottom of pot.
5. Simmer uncovered for 25–30 minutes, stirring occasionally.
6. Remove from heat. Serve in bowls with sour cream, cilantro, or green onions.
Notes
Add more broth if you like it thinner, or simmer longer to thicken.
Swap meat with mushrooms or lentils for a vegetarian version.
Make ahead and refrigerate overnight for deeper flavor.
