Ingredients
- 2 medium cucumbers, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon Korean red pepper flakes (gochugaru)
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 tablespoon sesame oil
- Salt to taste
Instructions
- Slice cucumbers thinly and place them in a bowl.
- In a separate bowl, mix garlic, gochugaru, vinegar, soy sauce, sugar, and sesame oil.
- Pour the dressing over the cucumbers and toss to combine.
- Let the salad sit for 10-15 minutes to marinate and allow flavors to meld.
- Serve chilled and garnish with sesame seeds, if desired.
Notes
For a spicier salad, adjust the amount of gochugaru. Can be refrigerated for up to 2 days, but the cucumbers may lose some of their crunch.
