Ingredients

  • ½ onion, finely chopped
  • â…“ cup sun-dried tomatoes (packed in oil), drained and chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp fresh rosemary, chopped
  • 1 tbsp fresh basil, chopped

Optional Substitutions:

Instructions

  • Season the Chicken: Pat the chicken breasts dry. Season with salt, pepper, and Italian seasoning.

  • Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.

  • Sauté Aromatics: In the same skillet, reduce heat to medium. Add garlic and onions, sauté until translucent and fragrant (about 2–3 minutes).

  • Add Sun-dried Tomatoes: Stir in the chopped sun-dried tomatoes. Cook for 1–2 minutes.

  • Create the Sauce: Pour in heavy cream and Parmesan cheese. Stir until smooth. Add rosemary and basil. Simmer 3–4 minutes until slightly thickened.

  • Combine Chicken and Sauce: Return the chicken to the skillet. Simmer for another 5–7 minutes until chicken is fully cooked and infused with flavor.
