Description
Ultra creamy crockpot chicken spaghetti with Velveeta is rich, cheesy, and family-friendly. A slow-cooked comfort food classic made with simple ingredients.
Ingredients
- 1.5 lbs boneless chicken breasts or thighs
- 1 can diced tomatoes with green chilies
- 1 can cream of chicken soup
- 12 oz Velveeta cheese, cubed
- 8 oz spaghetti
- ½ onion, diced
- 2 cloves garlic, minced
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Place chicken, tomatoes, soup, onion, garlic, and seasonings in crockpot. Cook on low 5–6 hours or high 3–4 hours.
- Remove chicken and shred. Return to crockpot.
- Add cooked spaghetti and Velveeta cubes. Stir well and cook on low for 20–30 minutes until cheese melts.
- Stir again before serving. Garnish with parsley or green onions.
Notes
Add sautéed mushrooms or cooked bacon for extra flavor. Use rotini if you prefer shorter pasta. For spice, toss in red pepper flakes or hot sauce.
