Ingredients
- 1 cup rolled oats
- 1/2 cup oat flour
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup almond milk (or any plant-based milk)
- 1/4 cup coconut oil (melted)
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a large mixing bowl, combine oats, oat flour, baking powder, baking soda, salt, and cinnamon (if using).
- Add applesauce, maple syrup, vanilla extract, almond milk, and melted coconut oil to the dry ingredients. Stir until well combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve with fresh fruit or a drizzle of maple syrup, if desired.
