Description

This Vegan Oat Cake with Berries is a soft, hearty, and naturally sweet cake made with oats, bananas, and berries. Perfect for breakfast, snack, or healthy dessert.


Ingredients

2 ripe bananas, mashed

1 cup almond milk

2 tbsp maple syrup

2 tbsp coconut oil, melted

1 ½ cups rolled oats

1 tsp baking powder

1 cup mixed berries (fresh or frozen)

1 tsp vanilla extract (optional)

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.

2. In a large bowl, mash the bananas until smooth.

3. Add almond milk, maple syrup, coconut oil, and vanilla; stir to combine.

4. Mix in oats, baking powder, and salt. Let sit for 10 minutes.

5. Fold in the berries gently.

6. Pour the mixture into the prepared baking dish and spread evenly.

7. Bake for 35–40 minutes until golden and firm in the center.

8. Let cool before slicing. Serve warm or at room temperature.

Notes

Use overripe bananas for best sweetness. This cake freezes well—slice and store in airtight containers. Reheat as needed.
