Watermelon Gazpacho

Description

A fruity, refreshing cold soup made with watermelon, cucumber, lime, and fresh herbs. Perfect for hot summer days!


Ingredients

  • 4 cups seedless watermelon, chopped
  • 1 cup cucumber, peeled and chopped
  • 1/4 red onion, chopped
  • 1/2 jalapeño, seeded
  • 2 tablespoons fresh lime juice
  • A handful of fresh mint or basil
  • Salt, to taste
  • Optional garnish: diced cucumber, mint sprigs

Instructions

  1. Add watermelon, cucumber, red onion, jalapeño, lime juice, mint, and salt to a blender.
  2. Blend until completely smooth.
  3. Chill for at least 30 minutes in the refrigerator.
  4. Pour into bowls or glasses and garnish with diced cucumber and mint.
  5. Serve cold and enjoy.

Notes

Adjust spice level with more or less jalapeño. For a creamy version, swirl in a bit of Greek yogurt before serving.
